Tools:
The most important thing about making the yummiest pancakes is all about having the right tools. Only then come the ingredients and how you prepare them. These are the tools worth investing in:
- A food blender will ensure you have a smooth batter and a quick preparation time
- A crepe maker
- A heart-shaped frame or a container with a thin end so that you can draw heart-shaped pancakes
Ingredients:
- 2 eggs
- 1 tablespoons of unsweetened plant-based milk (e.g. almond milk)
- 2 medium-sized ripped bananas
- 3 tablespoons of gluten-free flour
- some coconut/avocado oil or for cooking and for moistening the heart-shaped frame
- your toppings of choice (we used 1 cup of strawberries in a blender to make a sauce)
Steps:
1. In a blender, combine the wet ingredients until obtaining a smooth texture. Then gradually add the flour until a uniform batter forms.
2. Heat 1 tablespoon of the oil in a pan over medium/low heat. Coat the heart-shaped frame with the oil to prevent sticking, then position it over the pan.
3. Pour batter into the frame to form the pancakes. Cook for 2-3 minutes until bubbles pop up and the pancakes easily slide. Carefully flip with a spatula and cook for an additional 1-2 minutes on the other side.
4. Once the pancakes are golden and easily slide from the pan, remove the frame and garnish them creatively with your favorite toppings. Enjoy!
